Lookatit. Look. At. It. No matter what a recipes tell you, or the perfect “hacks” to get bakery style doomed muffins, it’s elusive. Between leavening agents, and oven temps, and bake times you have to find the perfect formula for you. I think I finally tweaked it enough that I can get bakery muffins. From both my ovens. I mean, C’mon. Top to muffin ratio. 😍 Just gorgeous.

Still sorting out all the little bits of our new “temporary” home. Well, for the next 3 years-ISH. I might have finally made a bread that is mostly comparable to what I was making in Canada with Canadian flour. Though I may have burned the bottom just a teeny bit with the gas cooker. Oh well, hopefully the landlord is also happy with his pane fresco, as I gave him a loaf. Now on to cook supper while drinking Prosecco, because it’s FriYAY

Sometimes you do what you gotta do. In temporary furnishings and the kitchen is SPARSE. But I still wanted to get my sourdough started in case it took time to acclimatize itself to the new flour and water. Well, there is no cooling rack, what there is, is a drying cupboard for dishes. Problem solved.

When a coworker has a birthday I will most certainly volunteer to make treats.
Sourdough chocolate cake, vanilla cake, and chocolate swiss meringue buttercream. And just a dusting of sprinkles to make it festive.
I also don’t really do small cakes. So we had enough to feed our small office, the pharmacy next door, and I still took home half a cake. #🎂

Sometimes you just want it a little bit different. I took my regular sourdough waffle recipe, and converted it into chocolate, with extra chocolate chips of course.

The husband referred to it as the ugly stepsister. 😂 Usually I’d be patient and bake them initially inside my roaster, then finish them for browning in the open oven. Well, I wanted to be able to go to the park with the kids so they could go sledding and this was the odd one out that wouldn’t fit inside the for the initial steam bake. Meaning it would have extended my baked time by 30 minutes. So I just chucked it in the oven on my baking steel. Not as pretty, no ear, and a totally different crust.
