A few years ago, there was a tomato glut in Ghana. At Earth Resource Technologies & Supply Services we realized that it was a good opportunity to take a second look at the tomato situation in terms of strategies to extend shelf life, and add value. We ran many experiments into pasteurization etc. Results were excellent and we had packages that have been on the shelf, outside the refrigerator for the past 3 years, and still going strong. Unfortuntely, Ghana has not had another glut in the last few years, but hopefully, if the tomato situation improves, we will be prepared. Now, this is the question, how prepared are we as a nation, to experiment, innovate and add value to the raw materials produced by the nation's farmers? Must it always go to rot, after so much hard work and anticipation from our farmers? Must we wait for a glut, or is there an opportunity to go into tomato paste production at any time of the year, or within the year? At Earth Resource Technologies & Supply Services, we are prepared, are you?
