We knew we had to stand apart and more importantly, we wanted to. So Glen and I began researching dehydration processes. Well, to be fair, I bought Glen a dehydrator, and he started from there. What began as a simple experiment quickly turned into an entire process that changed the way we create cocktails.

While many bars reach for premade syrups and purchased garnishes, Glen looks to something a little more inspiring: what the earth is giving us that season.
From fresh fruits and fragrant herbs to seasonal botanicals, Glen handcrafts our syrups from scratch, drawing inspiration from nature’s ever-changing harvest.
But here’s something you might not know…
The cocktails you enjoy in just a few minutes can take HOURS, sometimes DAYS, to prepare. 🍋
From carefully selecting seasonal ingredients to juicing fresh fruit, creating small-batch syrups, preparing fresh infusions, and slowly dehydrating garnishes, there is an incredible amount of time, patience, and intention behind every single glass.
And when we say made in-house, we mean it.
We don’t purchase dehydrated garnishes anymore. Not a single one. Every citrus wheel, every piece of fruit, and every finishing touch is prepared and dehydrated by our own team.
Because those beautiful little details don’t just happen. They’re created.
