Cotton is breathable but takes longer to dry. Linen is breathable but easily wrinkles with wear. Merino wool is breathable, dries faster than and can be layered for added warmth. Polyester is not breathable, gets heavy when wet but dries fast, and retains less wrinkles if any.

This is why your gym clothes, which are almost always made from synthetic fabrics, are usually stinky! It’s because synthetics are naturally attracted to oil and are afraid of water (lipophilic and hydrophobic). This natural attraction means that body oils get trapped in the fibers which promote bacteria that create malodor (stink). There’s nothing you can do about this besides ensure your garments are cleaned appropriately and sooner than later.
